
கவுனி அரிசி கஞ்சி

Rinse the Kavuni Rice several times until water runs lightly purple. Soak in cold water overnight (minimum 8 hours). Drain and discard soaking water.
Add the drained rice and 3 cups of water to a medium saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat to low, partially cover, and cook for 25–30 minutes, stirring every 5 minutes. The grains should be completely soft and the liquid should be thick and porridge-like.
Stir in the coconut milk (or whole milk), a pinch of salt, and your sweetener of choice. Cook on low for a further 3–5 minutes, stirring constantly, until smooth and creamy. Add cardamom powder and stir through.
Ladle into bowls. Top with toasted sesame seeds if using, and a small drizzle of extra coconut milk or honey for presentation. Serve warm.
